The world celebrates National Chai Day every Sept. 21, honoring a drink with centuries of history. While "Chai" simply means tea, "Masala" chai refers to tea prepared with a blend of spices.
Tea cultivation expanded dramatically during the 19th century under British colonial rule, creating a much larger industry in India. People adapted the drink to local tastes, combining strong tea with milk, sugar, and spices.
"No 2 cups of chai taste the same" due to regional recipes. In Kashmir, people drink pink chai or kahwa, while Hyderabad's Irani chai reflects Persian influence and Sulaimani is milk-free.
