Denmark's fabled restaurant noma sells products to amateur cooks
Noma sells hand-crafted fermented sauces and products online and in-store to reach more home cooks beyond its 70-seat restaurant, adapting after the Covid-19 pandemic.
- Noma has started selling wild rose vinegar, pumpkin-seed praline spread and mushroom cooking sauce online and from a greenhouse shop in front of noma to amateur cooks.
- After Covid-19 forced a temporary closure, Thomas Frebel recalled staff deciding to reduce reliance on in-house guests and bottle flavours from the fermentation lab and test kitchen, saying `Imagine you could buy this in the store`.
- Bottling flavours from its fermentation lab and test kitchen, noma uses fermentation techniques that can render pine edible, with some sauces requiring fermentation for over six months, Frebel said.
- The Copenhagen store will remain open while the restaurant relocates to Los Angeles in early 2026, and shop visitors can have coffee and taste products, with Agata Seferynska saying, `I love that you can just walk in and sort of experience it from the street.`
- Founded in 2003, noma has a history of residencies in London and Sydney and still charges 4,400 kroner for dinner, reflecting its exclusive, three Michelin stars status.
