I don't usually remember the first time I tried a dish, but for some reason I have engraved my premiere with the xato in a restaurant in Sitges, a couple of millennia ago. Used to consider escarola as a punishment, it must have impressed me that someone would have been able to transform it into such a delicacy, bathing it in the best sauce possible to tame its roughness.
