Chef Markus Stöckle has opened Marküs in Zurich’s Altstadt, bringing a seasonal tasting-menu restaurant to a building dating from 1260. The former Fat Duck chef is combining local Swiss produce, in-house fermentation and collaboration with ETH Zurich with interiors developed alongside Milan-based Studio Dragó.
