Smash burgers become the go-to for summer grilling
Tastewise said U.S. menu mentions of smash burgers rose 21.9% as the method spread from restaurants to home grills.
The number of burgers labeled "smash" or "smashed" on U.S. menus jumped 21.9% between the third quarter of 2023 and 2024, according to Tastewise, earning recognition in the National Restaurant Association's 2026 Hot Culinary Forecast.
Social media chatter about smash burgers is up 47% year over year, according to Tastewise, signaling the technique's transition from commercial kitchens into backyard grilling.
Using ground beef, a hot cast-iron pan, and a heavy spatula, cooks can prepare these burgers in 10 minutes, pressing the meat to create thin patties with deeply browned edges.
Unlike thicker burgers, this method relies on the cooking process rather than added marinades or special seasonings to build flavor, while the high fat content renders quickly to keep patties juicy.
Food writer Anne Jolly, creator of the Upstate Ramblings blog, notes the method allows home cooks to avoid careful heat management required for thicker patties, ensuring consistent results.
