Strawberries stay fresher when coated with an edible seaweed-based layer, lasting at least four days at room temperature, which is better than uncoated berries stored in a fridge.
The seaweed coating makes the fruit less sensitive to temperature and moisture changes, helping it remain fresh longer and retain more vitamin C and antioxidants.
This coating results in a 14% lower carbon footprint and reduces freshwater ecotoxicity by about 85% compared to refrigeration.
